Introduction Tom Yum

 

       Tom Yum has existed since at least the 14th century, and in one particular legend, the story goes that a Thai boatman on his way to trade in China had a boiled hot pot of soup with ingredients such as lemongrass, kaffir lime leaves, galangal and shrimp paste.

       This is how to make Tom Yum. First peel the shell and head off the shrimp, keep the tails on. Save the shell and shrimp head. Devein the shrimp and set aside. Second in a pot, bring 3 cups of water to boil. Add the shrimp head and shell to make shrimp Soup. Boil until the water turns slightly orange in colour. Third Drain the shrimp soup and discard the shrimp heads and shells. Fourth Turn the heat to high and add the lemongrass, galangal, kaffir lime leaves, bird's eye chilies, mushroom, roasted chili paste and roasted chili paste oil to the shrimp stock. Bring it to boil. Fifth Add in the shrimp and fish sauce and add the lime juice (if you add lime juice too early, the soup might turn bitter). Boil until the shrimps are cooked, dish out, and garnish with cilantro leaves. Last enjoy.
